Curried SnapperĀ
I made my first whole snapper last weekend (for Father’s Day) and it turned out great! I found a recipe online that I tweaked to add flavor. I marinated the snapper in a curry roux. A roux is a mixture that is based around flour and butter. Here are the ingredients you will need:
1 whole snapper
Small tomato chopped
Small onion chopped
1/2 cup of sliced mushrooms
1 tablespoon salt
1/2 cup milk
3 tablespoons butter
1/2 tablespoon basil
2 tablespoons curry
2 tablespoons all purpose flour
1 lemon
2 pinches crushed red pepper(optional)
Make sure the snapper is cleaned inside and out. Take half the lemon and squeeze into the inside of the snapper. Set aside.
Heat butter, Ā half of the onions, and mushrooms and let simmer for 5 minutes. Add flour and allow the mixture to brown. Add curry, basil, salt and squeeze the rest of the lemon into the mixture. Add milk and allow mixture the blend and thicken. Remove from heat.
Take tomatoes, the rest of the onions and the crushed red pepper and stuff the snapper. Pour half the roux into the snapper and the other half on top of it. Allow to marinate for at least four hours. Pre heat oven to 400 and bake for 35 minutes. If you have questions please use the ask me anything button!
